I am not a foodie, just a mum and someone who still cooks every day and by cooking I mean starting with all the ingredients and putting them together to make a meal, not buying a packet sauce and adding the meat.

Cupcakes

There is a lot of fuss at the moment about cupcakes, I don't know whether it's to do with the TV series '2 broke girls' - which is excellent but anyway they've been around for a very long time. I can remember making them as a girl with my mum and have made them ever since and I can promise you it's a many years! We used to call them fairy cakes or muffins. I have since inherited the cooking book my mum used and now my daughters are ready fighting over who is going to get it. I digress, CUPCAKES - yummy but not a modern thing just a fad.



Today I made fairy cakes or is it cupcakes for my daughter to take to an overnight stay in a castle - Lemon with lemon drizzle absolutely delicious and I forgot to take a photo so you'll have to make do with just the recipe:

Ingredients:

  • 200g margarine
  • 200g sugar
  • 200g flour (100g wholemeal, 100g white) you can use self-raising or plain, don't forget to add baking powder if using plain.
  • 3 eggs
  • 1 lemon - unwaxed
for the glaze:
  • lemon juice
  • powder sugar
Before you start set the oven to 180 degrees C and take the margarine out the fridge. Mix the soft marg and sugar together until smooth and then add one eggs at a time and mix again until blended and then grate the rind of the lemon into the mixture and add the flour little by little, once the mixture is smooth - don't forget the baking powder if needed - add the juice from half the lemon. It will have a lovely lemon tang now. 
Spoon the mixture in cases, this makes about 12, and pop them in the oven for 30 minutes. While waiting for them to cook make the glaze. squeeze the other half of the lemon into a microwavable bowl and add 3 tbsp of icing sugar, the easiest way to encourage them to mix together is to pop it in the microwave for 30 sec.
Get the fairy cakes out the oven after 30 mins., when they are springy to touch. While they are still hot use a fork to make holes in each cake and then pour the glaze over and let them cool.

Enjoy with a cup of tea. :)
